Chicken Parmesan is a classic Italian dish made from the very structure of Italian cuisine. Try this take on Chicken Parmesan with a side of broccoli and cheese. The chicken is grilled, not fried, and we moved the cheese to the broccoli for a simpler approach. Plus, it’s super easy to make. With prep time included, this dish requires no more than 30 minutes from start to finish.
Chicken Garlic pasta and Broccoli with Cheese
- 3 cups cooked whole wheat penne pasta (or about half of a 16 oz box)
- 1 pound thinly sliced chicken breast
- 1/2 jar of natural tomato based pasta sauce
- 4 cloves garlic, halved
- 3/4 cup grated all natural Monterrey jack and Colby cheese
- 4 cups steamed broccoli
- 5 tbsp olive oil
- Sea salt to taste
- Cracked pepper to taste
Cook pasta according to package directions. While pasta is cooking, heat about 3 tbsp of olive oil over medium heat in a large skillet. Season chicken with salt and pepper. Add garlic and chicken. Cook chicken for about 4 minutes on each side. (If chicken is not sliced thinly, more time is required. Around 6-8 minutes)
Add sauce to chicken and garlic, and turn to simmer until pasta is cooked.
Season broccoli with salt and pepper. In a steamer steam broccoli for approximately 6 minutes. When broccoli is still hot, add a little olive oil and cheese blend on top.
Serve chicken and sauce on top on pasta, and enjoy the broccoli and cheese as a side.
